Cool yourself down in this heatwave with one of these guilt-free Dark Choc & Coconut Banana Pops which are super easy to make.
Quick confession: I'm not a big banana fan, but I love these. Say what?! Well, I like banana flavoured things and when you put bananas in the freezer, they transform into these amazing, healthy, ice-cream-esque treats that are of course, banana flavoured. It may sound weird, but don't knock it until you've tried it!
To make these frozen banana treats even better, just dip them into some high-quality dark chocolate and roll into coconut flakes or nuts or rainbow sprinkles, or whatever else takes your fancy. Here's how I made mine.
You will need:-
- 2 handfuls of shredded coconut flakes
-160g dark chocolate
- 100g coconut oil
- a bunch of fairtrade bananas
- lollipop sticks
Step 1
Peel the bananas, cut them in half and place each half on a lollipop stick. Freeze for an hour.
Step 2
Break up the dark chocolate into smaller pieces and place them in a heatproof bowl with the coconut oil. Place the bowl over a pan of simmering water and gently melt, stirring occasionally to make sure everything is combined.
Step 3
Pull out your frozen bananas, dip them into the dark chocolate and roll them into the shredded coconut flakes. Return your newly dunked banana pops to the freezer for another hour to set. Licking the chocolate bowl clean afterwards is optional but highly recommended.
Step 4
Et voila! Your banana pops are now ready to eat! Store them in a container in the freezer for up to two weeks if you don't eat them all straight away. Enjoy!
